Speakeasy Distiller's Malt is Riverbend's high-enzyme, two-row base malt bred and kilned for the still. Where a brewing base malt is judged mostly on flavor, a distiller's malt is judged on power: this malt carries the diastatic muscle to convert not only itself but a large charge of unmalted grain alongside it, making it the workhorse base for whiskey and single-malt washes.
With an extract potential of 37 PPG and a very pale color of roughly 1.8 °Lovibond, it contributes clean, grain-forward sugar without adding color or heavy malt flavor that would muddy the spirit coming off the still. It is equally at home as a clean, neutral base malt in light lagers and pale ales.

For reliable conversion, hold the mash in the 148–158 °F range and give the enzymes time to work on the full charge of grain.
