Speakeasy Distiller's Malt - Riverbend

Speakeasy Distiller's Malt - Riverbend

High-Enzyme Power • Clean Grain Character • Built for Distilling

Speakeasy Distiller's Malt is Riverbend's high-enzyme, two-row base malt bred and kilned for the still. Where a brewing base malt is judged mostly on flavor, a distiller's malt is judged on power: this malt carries the diastatic muscle to convert not only itself but a large charge of unmalted grain alongside it, making it the workhorse base for whiskey and single-malt washes.

With an extract potential of 37 PPG and a very pale color of roughly 1.8 °Lovibond, it contributes clean, grain-forward sugar without adding color or heavy malt flavor that would muddy the spirit coming off the still. It is equally at home as a clean, neutral base malt in light lagers and pale ales.

Flavor & Aroma Profile

  • Clean, neutral grain character
  • Light, bready sweetness
  • Very pale straw color
  • High enzymatic (diastatic) power
  • No roast, caramel, or toast notes to carry into the spirit

Its job is to convert efficiently and disappear, letting the yeast, the cut, and the barrel define the finished spirit.

Brewing & Distilling Applications

Speakeasy Distiller's Malt is built for high-conversion mashes, including:

  • Single-malt and bourbon-style whiskey washes
  • High-adjunct mashes leaning on corn, rye, or wheat
  • Neutral spirit and moonshine washes
  • Clean American lagers and light ales

Its high diastatic power lets it carry a substantial percentage of unmalted grain through conversion.

Usage Recommendations

As the sole base in a single-malt wash, Speakeasy is used at up to 100% of the grain bill. In adjunct-heavy mashes it is typically 20–40% of the bill, supplying the enzymes that convert the corn or rye riding alongside it.

For reliable conversion, hold the mash in the 148–158 °F range and give the enzymes time to work on the full charge of grain.

Specifications

  • PPG (Points Per Pound Per Gallon): 37
  • Color: 1.8 °Lovibond
  • Diastatic Power: ~140 °Lintner
  • Flavor Notes: Clean, grainy, neutral
  • Usage Rate: 20–100% of grain bill
  • Source: Riverbend Malt House (Asheville, NC)

Whether you're running a single-malt wash or converting a big charge of corn and rye, Speakeasy Distiller's Malt provides the clean sugar and enzymatic power that a great spirit is built on.
